Oat Crunchies

oatcrunchieI love Christmas. Maybe not as much as I did when I was young, it was all about the presents and the thought of Santa coming down the chimney. Now, at 21, I come to appreciate the family aspects of Christmas much more and in particular enjoying good food in good company.

Good food is always home made and being the wannabe chef that I am Christmas is a great excuse to try out all manner of different recipes.

One that’s recently proven popular with the family is oat crunchies. They’re a bit like a breakfast bar, fruity and really great to snack on or leave on a plate when people come over. They’re also a cinch to make…

Ingredients (Makes 12)

  • 75g plain wholemeal flour
  • 75g porridge oats
  • 75g demerara sugar
  • 100g butter or margarine
  • 75g mixed fruit
  • (Optional) 2 tsp of cinnamon

Method

  1. Lightly grease a shallow oblong tin measuring 28×18×3.5 centimetres
  2. Mix together the flour, oats and sugar in a bowl. Add the butter or margarin bit by bit (not all at once) rubbing in well each time until the mixture has a breadcrumb texture.
  3. Spread half of the mixture over the base of the tin, pressing it down. Pour the mixed fruit on top.
  4. Sprinkle over the remaining crumb mixture and press down well. Bake in a preheated oven at 180C (350F) mark 4 for 25 minutes until golden brown. Leave in the tin for an hour to cool and then cut into bars and serve.

Simple but tasty!
